Ingredients

  • 1 1/2 lb. beef stew
  • 1/2 tsp. salt, pepper, chili powder and garlic powder
  • 1 chopped bell pepper
  • 1 chopped large onion
  • 3 large stalks celery
  • 1 pkg. mixed vegetables (large)
  • 3 large white potatoes, cubed
  • 1 large can diced tomatoes
  • 2 cans tomato sauce
  • 4 to 6 c. water
  • 2 beef bouillon

Method

  • Cover stew with 4 to 6 cups water and boil until tender.
  • Set meat aside.
  • Cook vegetables (except potatoes).
  • Add seasonings, tomatoes, tomato sauce and simmer until vegetables are tender.
  • Add potatoes.
  • Mix meat with vegetables.
  • Add more water if needed. Add bouillon and simmer until flavors mix, 30 to 35 minutes on low heat.
