- 1 1/2 lb. beef stew
- 1/2 tsp. salt, pepper, chili powder and garlic powder
- 1 chopped bell pepper
- 1 chopped large onion
- 3 large stalks celery
- 1 pkg. mixed vegetables (large)
- 3 large white potatoes, cubed
- 1 large can diced tomatoes
- 2 cans tomato sauce
- 4 to 6 c. water
- 2 beef bouillon
Method
- Cover stew with 4 to 6 cups water and boil until tender.
- Set meat aside.
- Cook vegetables (except potatoes).
- Add seasonings, tomatoes, tomato sauce and simmer until vegetables are tender.
- Add potatoes.
- Mix meat with vegetables.
- Add more water if needed. Add bouillon and simmer until flavors mix, 30 to 35 minutes on low heat.
