Ingredients
- 5 medium potatoes, peeled and cut into chunks
- 1/2 c. butter or margarine
- 2 eggs, beaten to blend
- salt and pepper
- 1 c. grated sharp Cheddar cheese
Method
- Preheat oven to 375°.
- Butter a 2-quart souffle or casserole dish. Cook potatoes until tender. Drain and mash.
- Add butter and eggs. Beat until smooth and airy.
- Season with salt and pepper. Transfer to baking dish and sprinkle cheese over.
- Bake until cheese is melted and potatoes are heated through (about 20 minutes).
- Serves 4.
