Ingredients

  • 5 medium potatoes, peeled and cut into chunks
  • 1/2 c. butter or margarine
  • 2 eggs, beaten to blend
  • salt and pepper
  • 1 c. grated sharp Cheddar cheese

Method

  • Preheat oven to 375°.
  • Butter a 2-quart souffle or casserole dish. Cook potatoes until tender. Drain and mash.
  • Add butter and eggs. Beat until smooth and airy.
  • Season with salt and pepper. Transfer to baking dish and sprinkle cheese over.
  • Bake until cheese is melted and potatoes are heated through (about 20 minutes).
  • Serves 4.
