Ingredients

  • 2 Tbsp. plain gelatin
  • 1 tsp. salt
  • 1 c. cold water or pineapple juice
  • 2 c. boiling water
  • 2 c. marshmallows, cut in squares
  • 1 c. Dukes mayonnaise
  • 1 c. sugar
  • 1/4 c. vinegar
  • 1 1/2 c. nuts, chopped
  • juice of 1 lemon
  • 1 1/2 c. pineapple, cut in small pieces
  • 6 oz. Philadelphia cream cheese

Method

  • Soak gelatin in cold water or juice for 5 minutes.
  • Dissolve in boiling water.
  • Add salt, sugar, vinegar and lemon juice. Cool. When gelatin begins to thicken, add remaining ingredients (marshmallows, pineapple, nuts and mayonnaise mixed with cream cheese).
  • Let stand until firm.
  • Serve on lettuce.
