- 2 Tbsp. plain gelatin
- 1 tsp. salt
- 1 c. cold water or pineapple juice
- 2 c. boiling water
- 2 c. marshmallows, cut in squares
- 1 c. Dukes mayonnaise
- 1 c. sugar
- 1/4 c. vinegar
- 1 1/2 c. nuts, chopped
- juice of 1 lemon
- 1 1/2 c. pineapple, cut in small pieces
- 6 oz. Philadelphia cream cheese
Method
- Soak gelatin in cold water or juice for 5 minutes.
- Dissolve in boiling water.
- Add salt, sugar, vinegar and lemon juice. Cool. When gelatin begins to thicken, add remaining ingredients (marshmallows, pineapple, nuts and mayonnaise mixed with cream cheese).
- Let stand until firm.
- Serve on lettuce.
