Ingredients

  • 2 medium onions, thinly sliced
  • 2 large garlic cloves, minced
  • 2 Tbsp. olive oil
  • 1 whole chicken, skinned and cut up into small pieces
  • 1 (16 oz.) can tomatoes and juice, cut up
  • 1 zucchini, cut into 1/3-inch thick rounds
  • 3 carrots, cut into 1-inch pieces
  • 10 Brussels sprouts, whole or cut in half
  • 3 green onions
  • 1/2 to 1 c. chicken broth
  • 1/2 c. raisins
  • 1/4 c. vermouth
  • 2 Tbsp. curry powder
  • 3/4 tsp. cinnamon
  • 2 tsp. honey
  • dash of cayenne pepper
  • fresh green herbs, parsley, basil and salt and pepper to taste
  • couscous

Method

  • In a large saute pan, saute the onions and garlic in olive oil until brown.
  • Remove onion mixture temporarily, then saute the chicken until brown.
  • Return onions to pan.
  • Add tomatoes, curry powder, cayenne, cinnamon, honey, vermouth and broth.
