Ingredients

  • 1 pound button mushrooms, trimmed and sliced
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • Salt and black pepper to taste
  • Chopped fresh parsley leaves for garnish

Method

  • Combine the first 3 ingredients in a bowl with a small pinch of salt and some pepper.
  • Cover and refrigerate for at least 2 hours and up to several days, tossing occasionally.
  • Taste and adjust the seasoning, then garnish and serve.
