Ingredients
- 1 pound button mushrooms, trimmed and sliced
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- Salt and black pepper to taste
- Chopped fresh parsley leaves for garnish
Method
- Combine the first 3 ingredients in a bowl with a small pinch of salt and some pepper.
- Cover and refrigerate for at least 2 hours and up to several days, tossing occasionally.
- Taste and adjust the seasoning, then garnish and serve.
