Ingredients

  • 1# fresh medium mushrooms
  • 3/4 cup vegetable oil
  • 3/4 cup red wine vinegar
  • 3/4 tablespoon black pepper
  • 3/4 tablespoon salt
  • 1 tablespoon sugar
  • Juice of one fresh lemon

Method

  • Place all ingredients into a heavy thick bottomed pan. Stir together gently so that all spices are dispersed evenly. Bring to simmer over medium heat and maintain the simmer for 12-15 minutes. Stir frequently and be gentle so you don't break the mushrooms apart.
  • When mushrooms are tender to the touch they are finished cooking.
  • Remove from the heat and chill for at least 12 hours. Serve when well-chilled.
