Ingredients

  • 1/2 cup Olive Oil
  • 1/2 cup white vinegar
  • 1-4oz jar diced pimentos
  • 3tbs chopped fresh parsley
  • 3 tbs minced green onion
  • 3 garlic cloves minced
  • 1 tsp sugar
  • 3/4 tsp basil
  • 1/2 tsp each of salt and pepper
  • 1-8oz block sharp cheddar cheese
  • 1-8ox cream cheese, chilled in freezer
  • crackers

Method

  • Combine first 10 ingredients and mix throughly.
  • Cut cheese length wise, then crosswise in 1/4 inch slices.
  • In a shallow dish that can be covered, alternate cheese slices and pour marinade over cheese and chill 8 hours, basting the cheese occasionally.
  • To serve, carefully remove cheese with a spatula on the serving dish and pour marinade on top.
  • Serve with crackers.
