- 1/2 cup Olive Oil
- 1/2 cup white vinegar
- 1-4oz jar diced pimentos
- 3tbs chopped fresh parsley
- 3 tbs minced green onion
- 3 garlic cloves minced
- 1 tsp sugar
- 3/4 tsp basil
- 1/2 tsp each of salt and pepper
- 1-8oz block sharp cheddar cheese
- 1-8ox cream cheese, chilled in freezer
- crackers
Method
- Combine first 10 ingredients and mix throughly.
- Cut cheese length wise, then crosswise in 1/4 inch slices.
- In a shallow dish that can be covered, alternate cheese slices and pour marinade over cheese and chill 8 hours, basting the cheese occasionally.
- To serve, carefully remove cheese with a spatula on the serving dish and pour marinade on top.
- Serve with crackers.
