Ingredients

  • 2 large garlic cloves, chopped
  • 1/4 cup olive oil
  • 2 lbs very ripe plum tomatoes, peeled and seeded or 32 ounce can Italian tomatoes
  • 6 fresh basil leaves, torn or chopped
  • 1/4 cup grated parmesan cheese
  • salt to taste

Method

  • In a medium sized saucepan, cook the garlic in olive oil over medium heat for 2-4 minutes.
  • Do not allow the garlic to brown.
  • Add tomatoes and simmer while using a slotted spoon to crush the tomatoes until sauce has thickened, 20-25 minutes
  • Stir in basil and parmesan cheese.
  • Salt to taste and serve.
