Ingredients
- 2 large garlic cloves, chopped
- 1/4 cup olive oil
- 2 lbs very ripe plum tomatoes, peeled and seeded or 32 ounce can Italian tomatoes
- 6 fresh basil leaves, torn or chopped
- 1/4 cup grated parmesan cheese
- salt to taste
Method
- In a medium sized saucepan, cook the garlic in olive oil over medium heat for 2-4 minutes.
- Do not allow the garlic to brown.
- Add tomatoes and simmer while using a slotted spoon to crush the tomatoes until sauce has thickened, 20-25 minutes
- Stir in basil and parmesan cheese.
- Salt to taste and serve.
