Ingredients

  • 1 crust for a 9" pie
  • 4 eggs
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 cup pure Grade B maple syrup
  • 3/4 cup light corn syrup
  • 2 tablespoons butter, melted
  • 1 cup quick-cook oats

Method

  • Preheat oven to 350F.
  • Place pie crust into a glass pie tin.
  • In a large bowl, whisk together eggs, sugar, flour, cinnamon, and salt.
  • Whisk together maple syrup, corn syrup, and butter; stir into egg mixture.
  • Stir in oats, then pour mixture into prepared pie crust.
  • Bake for 45 minutes until golden and puffed; filling will sink as it cools.
