Ingredients

  • 2 acorn squash
  • 23 cup maple syrup
  • 12 cup soft breadcrumbs
  • 14 cup margarine, softened

Method

  • Trim ends of squash; then cut cross-wise into 1-inch slices.
  • Discard seeds.
  • Arrange squash slices in a single layer in a large baking pan prepared with non-stick spray.
  • Season lightly with salt & pepper.
  • Cover and bake at 350* for 30-35 minutes.
  • Combine remaining ingredients and spread evenly over squash.
  • Return to oven and bake UNcovered for 15 to 20 more minutes, basting occasionally with the accumulating juices.
