- 2 c. spaghetti sauce
- 8 to 10 uncooked manicotti shells
- 2 eggs
- 1/2 lb. shredded Mozzarella cheese
- 1/2 c. cottage cheese
- 2 Tbsp. Parmesan cheese
- 2 Tbsp. soft butter or oleo
- 1/2 tsp. basil leaves, crushed
- 1/2 tsp. salt
- 1/2 tsp. pepper
Method
- Spray 9 x 9-inch glass pan with Pam.
- Thin spaghetti sauce with 1/2 to 3/4 cup water.
- Spoon 3/4 cup sauce over bottom of pan.
- Mix eggs, cheeses, oleo, salt, pepper and basil in a bowl. Use an iced tea spoon to stuff shells.
- Lay shells, side by side, in pan.
- Spoon over remaining sauce.
- Pour another 1/4 cup to 1/2 cup water over top.
- Cover and bake at 350° for about 45 minutes. Serve with a green salad and hot bread.
