Ingredients

  • 2 c. spaghetti sauce
  • 8 to 10 uncooked manicotti shells
  • 2 eggs
  • 1/2 lb. shredded Mozzarella cheese
  • 1/2 c. cottage cheese
  • 2 Tbsp. Parmesan cheese
  • 2 Tbsp. soft butter or oleo
  • 1/2 tsp. basil leaves, crushed
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Method

  • Spray 9 x 9-inch glass pan with Pam.
  • Thin spaghetti sauce with 1/2 to 3/4 cup water.
  • Spoon 3/4 cup sauce over bottom of pan.
  • Mix eggs, cheeses, oleo, salt, pepper and basil in a bowl. Use an iced tea spoon to stuff shells.
  • Lay shells, side by side, in pan.
  • Spoon over remaining sauce.
  • Pour another 1/4 cup to 1/2 cup water over top.
  • Cover and bake at 350° for about 45 minutes. Serve with a green salad and hot bread.
