Ingredients

  • 1 (2 1/2) can tomatoes
  • 1 can condensed tomato soup
  • 1 lg. sweet potato
  • 2 to 3 potatoes, diced
  • 2 stalks celery, diced
  • 1/2 teaspoon thyme leaves (opt.)
  • 1 onion
  • 2 quart. water
  • Salt, pepper (as desired)
  • 1 pkg. frzn mixed vegetables

Method

  • Simmer together the tomatoes, water, tomato soup and sweet potatoes.
  • Cut up fresh vegetables and add in to soup, with salt and pepper as desired.
  • When sweet potato is soft, put through sieve and mix into soup.
  • Add in frzn vegetables and thyme (optional).
  • Continue to simmer till vegetables are tender.
