Ingredients

  • 3/4 cup sugar, 3/4 cup water, peel of 1 lemon, 4 cups mangoes peel and cube,
  • 6 Tablespoons fresh lemon juice, 1 teaspoon pure vanilla extract, 2 small or 1 large habanero/scotch bonnet chili/seeded and chopped, pinch of salt

Method

  • 1st. combine sugar, water,lemon peel in sauce pan over medium heat; stiring constantly until sugar dissolves and mixture begins to boil. Remove from heat, discard peel,& chill in freezer for 15 minutes.
  • 2nd. combine chilled sugar mixture, mangoes, lemon juice, vanilla,salt, & chili in blender or food processor; process till smooth.
  • 3rd. transfer to ice cream maker and follow manufacturer's directions. Keep frozen until served.
