Ingredients

  • 1 can lrg can diced tomatoes
  • 1/4 cup bacon grease
  • 2 cup cooked rice
  • 1 medium onion
  • 1 tsp garlic powder
  • 1 * if tomatoes are fresh dice 5 large tomatoes to use
  • 1 salt and pepper to taste

Method

  • if using fresh tomatoes .... Peel and dice.
  • put bacon grease in skillet cook onion.
  • cook onion until soft.
  • add tomatoes, salt, pepper, garlic powder.
  • let cook until it starts boiling.
  • turn it down on low.
  • all the water will cook out and it will get thick and begin frying.
  • mix tomato mixture with the 2 cups of cooked rice.
