Ingredients

  • 1 lb. lean beef chuck, cubed
  • 2 Tbsp. fat
  • 4 c. water
  • 6 medium carrots, diced
  • 4 medium potatoes, diced
  • 1/2 small onion, sliced
  • 1/2 c. flour

Method

  • Roll beef chunks in flour and coat well. Melt fat in a large saucepan.
  • Brown beef slowly and thoroughly.
  • Add 4 cups water. Cover tightly and simmer for 1 1/2 hours.
  • At the end of 1 hour, if beef cubes are not completely covered, add 1 cup of water.
  • Add carrots, potatoes and onion to saucepan.
  • Cover tightly and simmer for 30 minutes until vegetables are tender.
