Ingredients

  • 9 pound granulated sugar
  • 10 pound brown sugar
  • 12 pound butter
  • 5 1/2 ounce. baking soda
  • 4 ounce. salt
  • 3 pound 12 ounce. Large eggs
  • 1 quart. honey
  • 8 ounce. vanilla
  • 16 pound 14 ounce. high gluten flour
  • 5 pound 10 ounce. cake flour
  • 25 pound chocolate chips
  • 10 pound macadamia nuts
  • 4 pound pecans

Method

  • Cream sugars, butter, soda and salt.
  • Beat in honey, Large eggs and vanilla.
  • Fold in flours completely then add in the chips and nuts.
  • Scale dough into 3 lb.
  • pcs.
  • Shape dough into rolls, wrap with paper and chill.
  • Portion each roll into 15 cookies.
  • Recipe may be reduced for home kitchen use.
  • Bake at 350 degrees till done.
  • Yield: 33 - 3 lb.
