Ingredients

  • 2/3 c. sifted unbleached flour
  • 1/3 c. sifted unsweetened cocoa
  • 1 1/2 oz. unsweetened baking chocolate
  • 1 Tbsp. canola oil
  • 6 extra large egg whites
  • 1 1/4 c. sugar
  • 3/4 c. applesauce (unsweetened)
  • 1/2 c. plain nonfat yogurt
  • 1 tsp. vanilla extract

Method

  • Combine flour and cocoa.
  • Melt baking chocolate with canola oil in a double boiler.
  • Mix egg whites and sugar to make a meringue.
  • Mix with applesauce, yogurt and vanilla extract.
  • Mix all ingredients together.
  • Spread oil in a 9 x 9-inch pan, wiping out extra oil.
  • Pour in mixture.
  • Preheat oven to 350°.
  • Bake for 20 to 25 minutes.
