Ingredients
- 2/3 c. sifted unbleached flour
- 1/3 c. sifted unsweetened cocoa
- 1 1/2 oz. unsweetened baking chocolate
- 1 Tbsp. canola oil
- 6 extra large egg whites
- 1 1/4 c. sugar
- 3/4 c. applesauce (unsweetened)
- 1/2 c. plain nonfat yogurt
- 1 tsp. vanilla extract
Method
- Combine flour and cocoa.
- Melt baking chocolate with canola oil in a double boiler.
- Mix egg whites and sugar to make a meringue.
- Mix with applesauce, yogurt and vanilla extract.
- Mix all ingredients together.
- Spread oil in a 9 x 9-inch pan, wiping out extra oil.
- Pour in mixture.
- Preheat oven to 350°.
- Bake for 20 to 25 minutes.
