Ingredients

  • 1 Tbsp. vegetable oil
  • 1 c. chopped onion
  • 1 large green pepper, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. dried thyme leaves, crushed
  • 1/4 tsp. dried oregano leaves, crushed
  • 2 cans (16 oz. each) red beans or pinto beans
  • 1 (10 3/4 oz.) can condensed tomato soup
  • 1 c. diced cooked ham or smoked sausage
  • 1/4 tsp. ground pepper (cayenne)
  • hot cooked rice

Method

  • In a 2-quart microwave-safe casserole dish, combine oil, onion, green pepper, garlic, thyme and oregano.
  • Cover with lid; microwave on High for 5 minutes or until vegetables are tender, stirring once during cooking.
  • Stir in beans, soup, ham and red pepper.
  • Cover; microwave on High for 5 minutes or until hot. Stir.
  • Reduce power to 50%.
  • Cover; microwave 15 minutes or until flavors are blended.
  • Serve over rice.
  • Makes about 5 cups or 5 servings.
