Ingredients

  • 1 lb. cooked lobster meat
  • 3/4 cup sharp cheddar cheese, shredded
  • 1 tbsp. pimento, chopped
  • 1 tbsp. onion, grated
  • 2 tbsp. celery, diced
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt
  • 1 tsp. Worcestershire sauce
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/4 cup flour
  • 4 tbsp. butter

Method

  • Preheat your oven to 350F.
  • Butter or spray a 6 cup casserole dish.
  • In a sauce pan melt the butter over medium heat.
  • Whisk in the flour and cook for about 2-3 minutes, stirring constantly to make sure that the flour does not brown.
  • Remove from heat and slowly whisk in the cream and milk.
  • Stir in the salt, pepper, celery, onion, pimento and Worcestershire sauce.
  • Add 1/2 a cup of the cheese and the lobster meat and stir to blend.
  • Pour the mixture into the prepared casserole dish and top it off with the 1/4 cup of cheese that is left.
  • Put it in the middle of the preheated oven until the cheese is lightly browned about 20 minutes.
