Ingredients

  • 2 cups Granulated Sugar
  • 1/2 cups Butter/margarine
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1/2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 cups Milk
  • 1 pinch Salt
  • 3-1/2 cups All-purpose Flour
  • 1 cup Coconut
  • 1 Tablespoon Lime Peel, Finely Grated
  • 4 Tablespoons Lime Juice
  • 1/8 cups Powdered Sugar (optional)

Method

  • Preheat oven to 350°F. Grease cookie sheet with cooking spray.
  • In a large bowl, beat granulated sugar and butter with electric mixer on medium speed. Add egg, beat well, then add vanilla, baking soda, and baking powder. Beat until smooth. Add milk. Mix, then add salt and flour. Mix well.
  • Next add coconut, lime peel and lime juice. Mix until blended.
  • On cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. Bake 10-12 minutes or until edges are browned. Do not cook until the cookie turns brown - just until the edges turn a golden brown or a little darker. Remove from cookie sheet to cooling rack.
  • Sprinkle about 1/8 tsp powdered sugar on each cookie. Enjoy!
