Ingredients

  • 20 ounces baby lima beans, cooked and drained
  • 2 tablespoons onions, chopped
  • 14 teaspoon fresh thyme, chopped or 18 teaspoon dried thyme, crushed
  • 1 medium garlic clove, minced
  • 2 tablespoons butter
  • 14 ounces chicken broth
  • 14 ounces beef broth
  • 1 cup tomatoes, diced (can be from a can)

Method

  • Mash about 2 cups of the lima beans with a fork and set aside.
  • In a saucepan, saute onion, thyme, and garlic in butter until tender, about 5 to 7 minutes.
  • Add mashed lima beans, whole lima beans, broths, and tomato.
  • Simmer a few minutes to heat through and serve.
