Ingredients
- 3 oz. pkg. strawberry jello or other flavor
- 2/3 c. boiling water
- 2 c. ice cubes
- 8 oz. Cool Whip
- 1 graham cracker pie crust
- 1 c. fresh fruit (sliced strawberries, peaches, bananas, raspberries or blueberries) or 1 can apricots, peaches, fruit cocktail or crushed pineapple, drained
Method
- Dissolve gelatin completely in boiling water, stirring about 3 minutes.
- Add ice cubes and stir until gelatin is thickened, about 2 to 3 minutes.
- Remove any unmelted ice.
- Blend in Cool Whip; whip until smooth.
- Fold in fruit.
- Chill, if necessary, until mixture will mound.
- Spoon into crust.
- Chill 2 hours.
- Garnish if desired with fresh fruit.
