Ingredients

  • 3 oz. pkg. strawberry jello or other flavor
  • 2/3 c. boiling water
  • 2 c. ice cubes
  • 8 oz. Cool Whip
  • 1 graham cracker pie crust
  • 1 c. fresh fruit (sliced strawberries, peaches, bananas, raspberries or blueberries) or 1 can apricots, peaches, fruit cocktail or crushed pineapple, drained

Method

  • Dissolve gelatin completely in boiling water, stirring about 3 minutes.
  • Add ice cubes and stir until gelatin is thickened, about 2 to 3 minutes.
  • Remove any unmelted ice.
  • Blend in Cool Whip; whip until smooth.
  • Fold in fruit.
  • Chill, if necessary, until mixture will mound.
  • Spoon into crust.
  • Chill 2 hours.
  • Garnish if desired with fresh fruit.
