Ingredients

  • 125g butter
  • 200g dark chocolate, broken into pieces
  • 110g caster sugar
  • 2 eggs
  • 185g plain flour
  • 5 Mars bars, 3 bars chopped coarsely
  • 80ml thickened cream
  • 200g milk chocolate, chopped coarsely

Method

Preheat oven to 180C. Prepare 10 patty pans on baking-muffin tray. Put butter and dark chocolate in bowl and stir over saucepan of simmering water until melted and smooth. Remove from heat and stir in caster sugar, eggs and flour. Spoon mixture into pans, until half full. Press chopped Mars bar chunks into the mixture then cover with remaining cupcake mixture. Bake 15-18 minutes.

To make ganache, heat cream in a saucepan over medium heat until it boils. Pour cream over milk chocolate and stir until smooth. Refrigerate about 30 minutes. Using an electric mixer, beat ganache until light and fluffy.

Allow cupcakes to cool before icing with generous amounts of ganache. Chop remaining Mars bars and press pieces into ganache.

Tip: Warm cupcakes in the microwave for 30 seconds before serving.
