- 1 c. dried lentils
- 1 tsp. margarine
- 1 c. chopped onion
- 1 c. chopped green pepper
- 2 cloves garlic, minced
- 1 (14 1/2 oz.) can whole tomatoes, chopped (undrained)
- 1 tsp. paprika
- 1/4 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. ground red pepper
- 2 c. cooked brown rice
- vegetable cooking spray
- 1 1/2 c. (6 oz.) shredded, fat-free Cheddar cheese
Method
- Cook lentils according to package directions, omitting salt. Drain lentils and set aside.
