Ingredients

  • 1/2 cup Condensed milk
  • 100 grams Butter
  • 200 grams Granita biscuits
  • 1 cup Coconut
  • 1 Lemon, rind finely grated
  • 1 Lemon Icing
  • 2 cup Icing sugar
  • 40 grams Butter, softened
  • 1 Lemon, juiced

Method

  • Grease and line 15.5 x 25cm slab tin.
  • Place condensed milk and butter in small pan over medium heat.
  • Cook, stirring for 4-5 minutes or until butter melts.
  • Crush biscuits in food processor until they are fine crumbs.
  • Place crumbs, coconut and 2 teaspoons lemon rind in a bowl.
  • Add hot butter mixture.
  • Stir until well combined.
  • Press biscuit mixture into prepared tin.
  • Refrigerate for 1.5 hurs or until firm.
  • Lemon Icing.
  • Place icing sugar, butter and 2.5 tablespoons lemon juice in a bowl.
  • Beat with a wooden spoon until smooth.
  • Spread icing over slice.
  • Refrigerate for futher 30 minutes or until icing has set.
