Ingredients

  • 2 large eggs
  • 3 large egg yolks
  • 3/4 c. sugar
  • 1/2 c. lemon juice
  • 1 Tbsp. lemon rind
  • 1/2 pt. heavy cream
  • 1 pkg. unflavored gelatin
  • 1/4 c. water
  • baked pie shell

Method

  • Whisk first 5 ingredients in saucepan.
  • Cook, stirring constantly, 10 minutes.
  • Heat gelatin and water over low heat until gelatin dissolves.
  • Stir into cooled lemon mix.
  • Whip heavy cream and fold into mixture.
  • Pour into baked pie shell and refrigerate.
  • Decorate with crystallized pansies.
