Ingredients
- 2 large eggs
- 3 large egg yolks
- 3/4 c. sugar
- 1/2 c. lemon juice
- 1 Tbsp. lemon rind
- 1/2 pt. heavy cream
- 1 pkg. unflavored gelatin
- 1/4 c. water
- baked pie shell
Method
- Whisk first 5 ingredients in saucepan.
- Cook, stirring constantly, 10 minutes.
- Heat gelatin and water over low heat until gelatin dissolves.
- Stir into cooled lemon mix.
- Whip heavy cream and fold into mixture.
- Pour into baked pie shell and refrigerate.
- Decorate with crystallized pansies.
