Ingredients

  • 1 tablespoon butter
  • 3/4 cup uncooked whole-wheat orzo
  • 1 1/2 cups unsalted chicken stock (such as Swanson)
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1/2 teaspoon grated lemon rind
  • 1/2 teaspoon grated orange rind
  • 1/4 teaspoon kosher salt

Method

  • Melt butter in a medium saucepan over medium heat. Add orzo; toss to coat. Add chicken stock to pan; bring to a simmer. Cover, reduce heat, and simmer 17 minutes or until liquid is absorbed. Stir in parsley, lemon rind, orange rind, and salt.
