Ingredients
- 1 tablespoon butter
- 3/4 cup uncooked whole-wheat orzo
- 1 1/2 cups unsalted chicken stock (such as Swanson)
- 2 tablespoons chopped fresh flat-leaf parsley
- 1/2 teaspoon grated lemon rind
- 1/2 teaspoon grated orange rind
- 1/4 teaspoon kosher salt
Method
- Melt butter in a medium saucepan over medium heat. Add orzo; toss to coat. Add chicken stock to pan; bring to a simmer. Cover, reduce heat, and simmer 17 minutes or until liquid is absorbed. Stir in parsley, lemon rind, orange rind, and salt.
