Ingredients

  • 14 cup superfine sugar
  • 1 small lemon
  • 1 lime
  • 14 cup marsala or 14 cup sherry wine
  • 1 14 cups heavy cream

Method

  • Juice lemon and lime and pare the rind.
  • Same some extra rind for decorating, if desired.
  • Put sugar, juice, rind, and sherry in a bowl then mix well and set aside to infuse for 2 hours.
  • Add the cream to the juice mixture and whisk until it just holds its shape.
  • Spoon into 4 tall serving glasses and chill in the refrigerator 2 hours.
  • Serve, decorating with rind if you want.
