Ingredients

  • 1 pkg. lemon gelatin
  • 1 c. cold water
  • 1 c. hot water
  • 1 (No. 303 or No. 2) can crushed pineapple, drained (save juice)
  • 1 c. miniature marshmallows
  • 3 diced bananas
  • nuts (pecans)
  • 1 c. pineapple juice (add water to make 1 c.)
  • 1 Tbsp. flour
  • 1/2 c. sugar
  • 1 egg, beaten
  • 1/2 pt. whipping cream, whipped
  • grated Cheddar cheese (for garnish)

Method

  • Mix jello with water.
  • When partially set, add pineapple, marshmallows, bananas and nuts.
  • In saucepan, cook juice, flour, sugar and egg.
  • When custard is cool, add whipped cream.
  • Spread custard mixture on top of jello.
  • Garnish with grated cheese.
