Ingredients
- 1/2 c. sugar
- 2 egg yolks
- grated rind of 2 lemons
- juice of 2 lemons
- 3 egg whites
- 1 c. cream
- almond flavoring (optional)
- graham cracker crumbs
Method
- Mix first 3 ingredients.
- Cook in double boiler until thick. Cool.
- Add lemon juice when mixture is cool.
- Beat egg whites, adding 1/2 cup sugar.
- Whip 1 cup cream.
- Fold together (beaten egg whites and whipped cream).
- Line dish (approximate size of an ice tray or a little larger size) with crumbs.
- Pour in mixture.
- Place more crumbs on top.
- Drained cherries may be added for decoration, if desired.
