Ingredients

  • 1/2 c. sugar
  • 2 egg yolks
  • grated rind of 2 lemons
  • juice of 2 lemons
  • 3 egg whites
  • 1 c. cream
  • almond flavoring (optional)
  • graham cracker crumbs

Method

  • Mix first 3 ingredients.
  • Cook in double boiler until thick. Cool.
  • Add lemon juice when mixture is cool.
  • Beat egg whites, adding 1/2 cup sugar.
  • Whip 1 cup cream.
  • Fold together (beaten egg whites and whipped cream).
  • Line dish (approximate size of an ice tray or a little larger size) with crumbs.
  • Pour in mixture.
  • Place more crumbs on top.
  • Drained cherries may be added for decoration, if desired.
