Ingredients

  • 7/8 cup butter cubed and room temperature
  • 7/8 cup sugar
  • 2 1/8 cups flour
  • 1/2 teaspoon salt
  • 2 lemons
  • 2 tablespoons fresh lemon juice

Method

  • In a food processor, pulse together the butter, sugar, flour, salt, and lemon zest.
  • When it starts to form a ball, stop.
  • Add the lemon juice and pulse another 2 to 3 times.
  • Roll the dough out into a long sausage shape and wrap in plastic wrap.
  • Refrigerate for 30 minutes.
  • Preheat the oven to 160 degrees Celsius.
  • Line a baking tray with parchment paper.
  • Remove the dough and the plastic wrap.
  • Cut the dough into 1-centimeter wheels and place them on the baking tray.
  • Bake for 10 minutes or until the edges are golden.
  • Do not move them much until they have cooled.
