Ingredients
- 7/8 cup butter cubed and room temperature
- 7/8 cup sugar
- 2 1/8 cups flour
- 1/2 teaspoon salt
- 2 lemons
- 2 tablespoons fresh lemon juice
Method
- In a food processor, pulse together the butter, sugar, flour, salt, and lemon zest.
- When it starts to form a ball, stop.
- Add the lemon juice and pulse another 2 to 3 times.
- Roll the dough out into a long sausage shape and wrap in plastic wrap.
- Refrigerate for 30 minutes.
- Preheat the oven to 160 degrees Celsius.
- Line a baking tray with parchment paper.
- Remove the dough and the plastic wrap.
- Cut the dough into 1-centimeter wheels and place them on the baking tray.
- Bake for 10 minutes or until the edges are golden.
- Do not move them much until they have cooled.
