Ingredients
- 1 pkg. whole green split peas, washed and drained
- 1 pkg. dried split pea soup mix with seasoning packet
- 1 onion
- 3 carrots, peeled and sliced
- 4 celery stalks, diced
- 2 vegetable bouillon cubes
- 4 qt. water
Method
- Put all ingredients into a large stock pot.
- Bring to a boil, then simmer for 2 to 2 1/2 hours.
- Add more water if soup becomes too thick.
- Puree the vegetables or leave as is.
- Either way is delicious.
- Serve with croutons.
