- 2 Tbsp. salad oil
- 1 clove garlic, minced
- 1 (1 lb.) can tomatoes
- 1 tsp. salt
- 1/4 tsp. basil
- 2 tsp. sugar
- 2 eggs
- 1/4 lb. mozzarella cheese, cut in thin slices
- 1/2 c. finely chopped onion
- 1 lb. ground beef
- 1 (6 oz.) can tomato sauce
- 1/3 tsp. pepper
- 1/2 tsp. oregano
- 9 lasagna noodles (cooked to pkg. directions)
- 1 lb. ricotta cheese
- 1/4 c. grated Parmesan cheese
Method
- Heat oil in skillet, add onion and garlic.
- Cook until onion and garlic are tender but not browned.
- Add ground beef and cook slowly, stirring occasionally until beef loses red color.
- Add tomatoes, tomato sauce, seasonings and sugar.
- Simmer uncovered for 30 minutes or until sauce is thick but not dry.
- Cook noodles according to directions on package.
- In separate bowl, beat eggs, blend in ricotta cheese.
- In a greased 2 quart casserole, layer half of meat sauce, 3 lasagna noodles, half of ricotta cheese and half of mozzarella cheese.
- Repeat layers of noodles, ricotta and mozzarella cheese.
- Sprinkle on parmesan cheese.
- Bake at 350° until bubbly and golden, about 35 to 40 minutes.
- Cut into squares. Serves 9.
