Ingredients

  • 2 Tbsp. salad oil
  • 1 clove garlic, minced
  • 1 (1 lb.) can tomatoes
  • 1 tsp. salt
  • 1/4 tsp. basil
  • 2 tsp. sugar
  • 2 eggs
  • 1/4 lb. mozzarella cheese, cut in thin slices
  • 1/2 c. finely chopped onion
  • 1 lb. ground beef
  • 1 (6 oz.) can tomato sauce
  • 1/3 tsp. pepper
  • 1/2 tsp. oregano
  • 9 lasagna noodles (cooked to pkg. directions)
  • 1 lb. ricotta cheese
  • 1/4 c. grated Parmesan cheese

Method

  • Heat oil in skillet, add onion and garlic.
  • Cook until onion and garlic are tender but not browned.
  • Add ground beef and cook slowly, stirring occasionally until beef loses red color.
  • Add tomatoes, tomato sauce, seasonings and sugar.
  • Simmer uncovered for 30 minutes or until sauce is thick but not dry.
  • Cook noodles according to directions on package.
  • In separate bowl, beat eggs, blend in ricotta cheese.
  • In a greased 2 quart casserole, layer half of meat sauce, 3 lasagna noodles, half of ricotta cheese and half of mozzarella cheese.
  • Repeat layers of noodles, ricotta and mozzarella cheese.
  • Sprinkle on parmesan cheese.
  • Bake at 350° until bubbly and golden, about 35 to 40 minutes.
  • Cut into squares. Serves 9.
