Ingredients

  • 1 pkg. lasagna
  • 2 (16 oz.) Ricotta cheese
  • 2 beaten eggs
  • 1/2 c. grated Parmesan cheese
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 2 (10 oz.) pkg. frozen spinach
  • 4 c. shredded Mozzarella cheese
  • 2 (26 oz.) jars pasta sauce

Method

  • Cook noodles and then cut in half.
  • Prepare lasagna.
  • Drain. In medium bowl blend Ricotta cheese, eggs, Parmesan cheese, salt, pepper and garlic powder.
  • Stir in thawed and cooked spinach and 2 cups of Mozzarella cheese.
  • Spread Ricotta mixture evenly on lasagna strips.
  • Roll up each strip.
