Ingredients

  • 1 whole chicken or fryer parts to equal whole chicken
  • 3 blades celery
  • 1 medium onion
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup (you may substitute 3 c. broth that you cooked chicken in)
  • 3/4 c. Ro-Tel tomatoes with green chilies
  • 3 flour tortillas
  • 1/4 c. grated sharp or other cheese

Method

  • Cook fryer in boiling water; take meat off bone and add celery, onion, a little butter, garlic, soups, 3 cups of broth from chicken, Ro-Tel tomatoes and tortillas.
  • Top with grated cheese.
  • Put in baking dish a layer of meat and a layer of tortilla strips.
  • Pour over the the liquids and mix with sauteed celery, onion and tomatoes (garlic optional).
  • Bake at 350° for about 30 minutes.
