- 1 whole chicken or fryer parts to equal whole chicken
- 3 blades celery
- 1 medium onion
- 1 can cream of mushroom soup
- 1 can cream of chicken soup (you may substitute 3 c. broth that you cooked chicken in)
- 3/4 c. Ro-Tel tomatoes with green chilies
- 3 flour tortillas
- 1/4 c. grated sharp or other cheese
Method
- Cook fryer in boiling water; take meat off bone and add celery, onion, a little butter, garlic, soups, 3 cups of broth from chicken, Ro-Tel tomatoes and tortillas.
- Top with grated cheese.
- Put in baking dish a layer of meat and a layer of tortilla strips.
- Pour over the the liquids and mix with sauteed celery, onion and tomatoes (garlic optional).
- Bake at 350° for about 30 minutes.
