Ingredients

  • 1 cup dates
  • 1 1/2 cups walnuts
  • 3 avocados
  • 1/4 cup lime juice
  • 1 cup honey
  • 1 teaspoon lime zest
  • kiwis for garnish, optional

Method

  • make the crust by using a food processor to finely blend walnuts and dates to make dough. If it's not working, add a tablespoon of water.
  • Take tart shells and line with saran wrap. Press dough into the shells.
  • Use food processor again to blend the avocados, lime juice, lime zest, honey into smooth/pudding-like mix. Taste and add more lime or honey if needed.
  • Pour lime mixture into tart shells and add kiwi for decoration.
  • Put in the freezer for about 30-60mins, or until mixture is the consistency of mousse.
  • Take out and lift the saran wrap from the mold and enjoy!
