- 1 cup dates
- 1 1/2 cups walnuts
- 3 avocados
- 1/4 cup lime juice
- 1 cup honey
- 1 teaspoon lime zest
- kiwis for garnish, optional
Method
- make the crust by using a food processor to finely blend walnuts and dates to make dough. If it's not working, add a tablespoon of water.
- Take tart shells and line with saran wrap. Press dough into the shells.
- Use food processor again to blend the avocados, lime juice, lime zest, honey into smooth/pudding-like mix. Taste and add more lime or honey if needed.
- Pour lime mixture into tart shells and add kiwi for decoration.
- Put in the freezer for about 30-60mins, or until mixture is the consistency of mousse.
- Take out and lift the saran wrap from the mold and enjoy!
