Ingredients

  • 1/3 cup almond flour
  • 3/4 cup coconut flour
  • 3/4 cup psyllium husks whole
  • 3/4 cup protein powder
  • 2 teaspoons cream of tartar
  • 2 teaspoons baking powder
  • 1/2 cup butter
  • 12 eggs

Method

  • Preheat oven to 180C
  • Melt the butter in the microwave. Make sure it's not too hot, as we will be adding the eggs straight to it, and you don't want any lumps of cooked egg in the batter.
  • Add the eggs to the butter. Give it a good stir at this point to combine them.
  • Combine the coconut flour, almond flour, psyllium husks, protein powder, cream of tartar, and baking powder into a different bowl (forgot to get a picture of this step), and give it a thorough stir to combine. Add to the egg and butter mixture.
  • Stir well. Make sure that everything is well incorporated, and that there are no random pools of egg and butter in the mix.
  • Grease a baking pan.
  • Put in the oven for 90 minutes.
  • Let it sit for 10 minutes in the pan, then put it on a cooling rack. Store in the fridge.
