Ingredients

  • 1 - 1 1/2 pounds of chicken breast cubed and browned
  • 1 bag of corn chips
  • 2 small cans diced green peppers
  • 1 pound pepper Jack Cheese - grated
  • 1 large can cream of chicken soup
  • 1 tsp. seasoning salt
  • 1/4 cup water
  • 1/4 cup milk

Method

  • Preheat oven 400°.
  • In frying pan brown cubed chicken, add seasoning salt and 1/4 cup water turn down burner to low and cover.
  • In large mixing bowl combine soup, milk and green peppers. When chicken is done add to soup mixture.
  • Line a 9 X 13 greased pan with layer of corn chips.
  • Then spoon on soup and chicken mixture.
  • Sprinkle with cheese (about 1/3 of a pound).
  • Repeat. Then cover with a layer of chips and the rest of the cheese.
  • Cook for 15-20 minutes.
  • Let stand for 10 minutes.
