Ingredients
- 4 medium sized raw potatoes, grated
- 1 c. mashed cooked potatoes
- 2 eggs, well beaten
- salt and white pepper to taste
- fat for frying
Method
- Press out the liquid from the grated potatoes and discard. In a medium size bowl, combine the grated potatoes with the mashed potatoes, eggs, salt and pepper.
- Shape the mixture into the desired size pancakes and fry in hot fat in a large skillet over medium-high heat until brown and crisp on both sides.
- Drain on paper towels.
- Serves 4 to 5.
