Ingredients

  • 4 medium sized raw potatoes, grated
  • 1 c. mashed cooked potatoes
  • 2 eggs, well beaten
  • salt and white pepper to taste
  • fat for frying

Method

  • Press out the liquid from the grated potatoes and discard. In a medium size bowl, combine the grated potatoes with the mashed potatoes, eggs, salt and pepper.
  • Shape the mixture into the desired size pancakes and fry in hot fat in a large skillet over medium-high heat until brown and crisp on both sides.
  • Drain on paper towels.
  • Serves 4 to 5.
