Ingredients

  • 1-1/4 lb. beef chuck, cut into 1-inch squares
  • 1 tbsp. oil
  • 1-1/2 tbsp. flour
  • 1 tsp. salt
  • 1 dash pepper
  • 3/4 tsp. chili powder
  • 2 cloves garlic, minced
  • 1 md. onion
  • 1 green pepper, chopped
  • 1 can (10-1/2 oz.) condensed beef broth
  • 1 can water
  • 1/4 tsp. dried oregano leaves
  • 4 md. potatoes, peeled and sliced
  • 2 md. carrots, peeled and sliced

Method

  • Heat oil in Dutch oven.
  • Toss beef in mixture of flour, salt and pepper.
  • Brown well on all sides in the hot oil.
  • Add chili powder, garlic and onion.
  • Saute lightly.
  • Add beef broth, water and oregano.
  • Bring to a boil.
  • Cover.
  • Reduce heat and simmer for about 1 hour, stirring from time to time.
  • Add vegetables.
  • Simmer for another 20 minutes or until meat is tender.
