- 1-1/4 lb. beef chuck, cut into 1-inch squares
- 1 tbsp. oil
- 1-1/2 tbsp. flour
- 1 tsp. salt
- 1 dash pepper
- 3/4 tsp. chili powder
- 2 cloves garlic, minced
- 1 md. onion
- 1 green pepper, chopped
- 1 can (10-1/2 oz.) condensed beef broth
- 1 can water
- 1/4 tsp. dried oregano leaves
- 4 md. potatoes, peeled and sliced
- 2 md. carrots, peeled and sliced
Method
- Heat oil in Dutch oven.
- Toss beef in mixture of flour, salt and pepper.
- Brown well on all sides in the hot oil.
- Add chili powder, garlic and onion.
- Saute lightly.
- Add beef broth, water and oregano.
- Bring to a boil.
- Cover.
- Reduce heat and simmer for about 1 hour, stirring from time to time.
- Add vegetables.
- Simmer for another 20 minutes or until meat is tender.
