- 3 lb. chicken, cut up
- 3 Tbsp. flour for dredging
- 4 Tbsp. lard
- 2 c. sweet red pepper
- 1 green onion
- 2 garlic cloves
- 1/2 lb. ham
- 3 c. onion
- 1 1/2 lb. pork
- 6 hot sausages
- 3 tsp. salt
- 1 tsp. pepper
- 1/2 tsp. red pepper
- 4 bay leaves
- 1/2 lb. shrimp
- 2 c. chicken broth
- 2 c. water
Method
- Brown floured chicken in lard (3 tablespoons).
- Remove from stove.
- Saute onions, red pepper, green onion, garlic, ham and pork until tender in a large pot with 1 tablespoon lard.
- Add broth and water.
- Cook over medium heat for 20 minutes.
- Add sausages.
- Stir in salt, pepper, red pepper and bay leaves.
- Cook for four minutes.
- Stir in shrimp and cover.
- Cook for 10 more minutes.
