Ingredients

  • 3 lb. chicken, cut up
  • 3 Tbsp. flour for dredging
  • 4 Tbsp. lard
  • 2 c. sweet red pepper
  • 1 green onion
  • 2 garlic cloves
  • 1/2 lb. ham
  • 3 c. onion
  • 1 1/2 lb. pork
  • 6 hot sausages
  • 3 tsp. salt
  • 1 tsp. pepper
  • 1/2 tsp. red pepper
  • 4 bay leaves
  • 1/2 lb. shrimp
  • 2 c. chicken broth
  • 2 c. water

Method

  • Brown floured chicken in lard (3 tablespoons).
  • Remove from stove.
  • Saute onions, red pepper, green onion, garlic, ham and pork until tender in a large pot with 1 tablespoon lard.
  • Add broth and water.
  • Cook over medium heat for 20 minutes.
  • Add sausages.
  • Stir in salt, pepper, red pepper and bay leaves.
  • Cook for four minutes.
  • Stir in shrimp and cover.
  • Cook for 10 more minutes.
