- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 1 clove garlic, minced
- 1 rib celery, chopped
- 2 Tbsp. vegetable oil
- 2 c. meat (total) *
- 3 c. boiled rice
- 1 (14 1/2 oz.) can whole peeled tomatoes, crushed
- 1/4 tsp. thyme
- 1/4 tsp. cayenne pepper
- salt and pepper to taste
- 1/2 c. minced parsley

- *Choose 2 or more from ham, cooked chicken, cooked shrimp, Cajun or Polish sausage, cut into large dice.
