Ingredients

  • 2/3 c. shortening
  • 2 c. sugar
  • 3 eggs
  • 2 c. buttermilk
  • 2 tsp. soda
  • 1 tsp. baking powder
  • pinch of salt
  • 1 tsp. cloves
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 2 tsp. cocoa
  • 2 c. jam
  • 3 c. flour

Method

  • Cream sugar and shortening.
  • Add eggs, one at a time; mix well.
  • Add soda to buttermilk.
  • Let stand until it foams.
  • Mix dry ingredients.
  • Add one cup at a time to other mixture and beat. Add buttermilk, a little at a time, then fold in the jam last. Bake at 350° for 35 minutes.
  • Makes a very large cake.
