Ingredients

  • 1 tbs butter
  • 2 tbs oil
  • 1 medium onion, chopped
  • 1 stalk celery, sliced
  • 3/4 cup green pepper
  • 1 clove garlic, minced
  • 1 8oz can stewed tomatoes
  • 32 oz chicken broth
  • 3 tbs hot Hungarian paprika
  • 1/4 tsp thyme
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup long grain white rice
  • 1 cup sliced cooked chicken

Method

  • In large saucepan heat butter and oil. Add onion, celery, green pepper, and garlic; saute 3-5 min. Add tomatoes, broth,thyme, salt, pepper, paprika, and rice. Bring to boil, reduce heat to simmer. Cover and simmer for 15 min. Add chicken and simmer for 5 min. or until rice is tender.
