Ingredients

  • 1 quart Vegetable Stock
  • 28 ounces, weight Canned Diced Tomatoes
  • 1 whole Medium Onion, Chopped
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Diced Garlic
  • 1-1/2 Tablespoon Italian Seasoning
  • 4 whole Italian Sausage Links (each Link Cut Into 6 Rounds, And Rolled Into A 'meatball' Shape)
  • 2 cups Fresh Spinach

Method

  • Add vegetable stock, diced tomatoes, onion, olive oil, garlic and Italian seasoning into a crockpot. Set on high, cover and cook for 1-2 hours. Add the Italian sausage meatballs and continue to cook on high for 2-3 hours. Stir in spinach and serve immediately.
