Ingredients

  • 1 Tablespoon butter
  • 2 lbs. mild Italian sausage, (skinned) whole, or in 1 inch pieces
  • 3-4 zucchini
  • 1 small onion, diced
  • 3-4 roma tomatoes, diced
  • 1 Tablespoon dried basil
  • salt

Method

  • In a non-stick skillet (large frying pan) melt butter on low heat. Add onions and Italian sausage. Saute until sausage starts to brown on all sides. Add zucchini and 1/2 cup water. Continue sauteing until zucchini is crisp tender, adding more water as necessary. When sausage is fully cooked, add diced tomatoes and basil, and salt to taste. Contine cooking until tomatoes are thoroughly heated and a little soft. Serve with garlic bread.
