- 1 stick butter
- 2 c. sugar
- 2 c. cake flour
- 1 c. buttermilk
- 1 c. chopped pecans
- 1 c. coconut
- 1 tsp. baking soda
- 1/2 c. shortening
- 5 egg yolks
- 5 egg whites, beaten
- 1 tsp. vanilla
Method
- Cream butter, shortening and sugar.
- Add egg yolks and beat well.
- Combine flour and soda.
- Add to cream mixture alternately with buttermilk.
- Stir in vanilla, coconut and pecans.
- Fold in stiffly beaten egg whites.
- Pour batter into 3 greased 9-inch pans and bake at 350° for 25 minutes.
