Ingredients
- 1 box Israeli cous cous
- 1 red pepper chopped
- 1/2 English cucumber chopped
- 1 mango diced
- 2 carrots diced
- 1/2 cup walnuts or pecans
- 1/2 cup raisins
- 1 cup fresh cilantro chopped
- 3 tablespoons red wine vinegar
- 1/4 cup olive oil
- salt and pepper to taste
Method
- Prepare cous cous as directed on box.
- Transfer cous cous to bowl and cool down prior to mixing the rest of the ingredients.
- Combine all ingredients together in bowl and mix.
- Serve Chilled
