Ingredients

  • 1 box Israeli cous cous
  • 1 red pepper chopped
  • 1/2 English cucumber chopped
  • 1 mango diced
  • 2 carrots diced
  • 1/2 cup walnuts or pecans
  • 1/2 cup raisins
  • 1 cup fresh cilantro chopped
  • 3 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste

Method

  • Prepare cous cous as directed on box.
  • Transfer cous cous to bowl and cool down prior to mixing the rest of the ingredients.
  • Combine all ingredients together in bowl and mix.
  • Serve Chilled
