Ingredients
- 1 pound waxy potatoes mainly, peeled and halved
- 1 pound carrots peeled and sliced
- 1/2 pound leeks washed and sliced
- 1 3/4 pounds lamb lean, cubed
- 1 bunch thyme leaves removed
- white pepper
Method
- Preheat oven to 300°F. Spread the bottom of a Dutch oven with the potatoes and cover with water. Layer the rest of the ingredients in the pot and season well, adding the thyme throughout. Bake for about 3 hrs, basting regularly. Sprinkle with pepper to finish.
