Ingredients

  • 2 c. chopped zucchini
  • 1 c. chopped tomato (I like Italian tomato)
  • 1/2 c. chopped onion
  • 1/3 c. grated Parmesan cheese
  • 1 1/2 c. milk
  • 3/4 c. Bisquick
  • 3 eggs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • Heat oven to 400°.
  • Grease a 10-inch quiche dish or pie plate 1 1/2 inches deep.
  • Sprinkle zucchini, tomato, onion and cheese into the pie plate.
  • Beat remaining ingredients until smooth, about 15 seconds in a blender on high or for about 1 minute with mixer.
  • Pour into pie plate.
  • Bake until a knife inserted in the center comes out clean, about 30 minutes.
  • Cool 5 minutes before slicing.
  • Makes 6 servings.
