Ingredients
- 2 c. chopped zucchini
- 1 c. chopped tomato (I like Italian tomato)
- 1/2 c. chopped onion
- 1/3 c. grated Parmesan cheese
- 1 1/2 c. milk
- 3/4 c. Bisquick
- 3 eggs
- 1/2 tsp. salt
- 1/4 tsp. pepper
Method
- Heat oven to 400°.
- Grease a 10-inch quiche dish or pie plate 1 1/2 inches deep.
- Sprinkle zucchini, tomato, onion and cheese into the pie plate.
- Beat remaining ingredients until smooth, about 15 seconds in a blender on high or for about 1 minute with mixer.
- Pour into pie plate.
- Bake until a knife inserted in the center comes out clean, about 30 minutes.
- Cool 5 minutes before slicing.
- Makes 6 servings.
